While I have no expertise in Hawaiian food, my adult son spent many summers in Hawaii. He assures me that this cookbook in its classics section reflects true Island flavors and that the remainder of the book reflects Island sensibilities. The traditional raw, seared or cooked fish pokes recipes are fundamental to understanding the remainder of the cookbook. The author suggests alternative fish and at times, alternative ingredients if you cannot obtain the required ingredients. The result is that you can quickly become an "extemporaneous" poke cook using what is available in the current season in your locale. This freedom in recipes is enhanced by the inclusion of the South Asian "Bhelpuri Shrimp", the "Moroccan Blackened 'Ahi", the Peruvian "Mahimahi Ceviche with Mango and Liliko'i"More surprising is the Vegetable Poke section where vegetables, generally cooked, are presented in poke style. Several recipes here are excellent outside this context e.g. "Sweet Potato and Cilantro", "Beet and Macadamia", "Carrot Ginger". These recipes are good but not particularly innovative. The book closes with bases for Poke Bowls giving a complete meal - here contemporary food trend show as in the cauliflower rice "Kimchi-Cauli Rice", "Poke 'Nachos'" ... and a few drinks, snacks, etc. to create a complete meal.

I bought this to broaden my repertoire of recipes to cater in a salad bar buffet. I was trying out many recipes with international flavors by testing, developing recipes. I have created quite a lot and many are keepers and can be rotated throughout the season of ingredients like fruits, vegetables, and some protein. So going back to this book - the recipes are easy-to-follow and this is a great introduction to what are the possibilities of making poke at home. I am glad that there are classic recipes, and then she gives more inspiration on flavor affinities that go well to suit a food lifestyle choice like going vegan or being more creative on mixing other vegetables and protein. Then the sauces are great too.I had tried several classic and modern recipes - they are really good!Then she also gives recipes for other Hawaiian treats especially the Furikaki popcorn which I appreciate once in a while. Huapia is more of an acquired taste and liking - I know think this is comfort food. I am discovering more Hawaiian snacks when reading the last chapter.I would say this book opened my culinary mind and knowledge base to the next level making poke, and other complementary dishes that goes well with it. The last chapter gives us what Hawaiian snacks to eat with a melting pot of food influences that goes well with every dish. This is a well-written cookbook that feature poke bowls, Hawaiian comfort foods and snacks for every food lifestyle choice it caters. An excellent cookbook to have in your kitchen library.

We bought this for my husband for Father's Day; he wants to make & eat every recipe. I can't wait to make the haupia dessert recipe as well. This author has done an outstanding job; mahalos to Martha Cheng!

LUV IT! ! If you're a beginner this is the book for you! Easy to read easy to follow well written

A small (96 pages) but comprehensive (including classic, modern and vegetable poke plus a few Hawaiian dishes) introductory cookbook. Instructions are easy to follow. It also has some nice pictures. A good cookbook to have.

Excellent recipes

We used to just crave poke but now with the help of this book we make it really often. The recipes are authentic and delicious.
